VANILLA CHIA PUDDING


Ingredients

  • ½ vanilla bean, split lengthwise  

  • ½ cup chia seeds

  • 2 cups non dairy milk

  • 2 tsp maple syrup


Makes 2-4 servings

Scrape seeds from vanilla bean and add to a bowl with remaining ingredients.  Whisk together ensuring there are no lumps.  Wrap the bowl with plastic and place in the fridge for 1hr or preferably overnight.

Top with nut butter, fresh fruit, and/or granola
