DEVILED EGG TOAST
Ingredients
8 hard boiled eggs. Minced
2 tablespoons cheddar, grated
2 tablespoons chives, minced *reserve some for garnish
½ cup mayo
2 tablespoons stone ground mustard
4 slices thick cut smoked bacon, cooked, drained, and chopped *fat reserved
1 teaspoon kosher salt
1 teaspoon fresh cracked black pepper
2 pieces multi grain, sliced and toasted lightly in olive oil
2 breakfast radishes, chopped
Makes 3-4 servings
Put eggs, cheddar, and chives in a mixing bowl and set aside.
Mix together mayo, mustard, and 2 tablespoons reserved bacon fat in a mixing bowl. Season with salt and pepper and add to egg mixture.
Spoon mixture on top of toasted bread and cut into 3 pieces
Garnish with chopped radish, crumbled bacon bits, and more chives
