DEVILED EGG TOAST


Ingredients

  • 8 hard boiled eggs. Minced

  • 2 tablespoons cheddar, grated

  • 2 tablespoons chives, minced *reserve some for garnish

  • ½ cup mayo

  • 2 tablespoons stone ground mustard

  • 4 slices thick cut smoked bacon, cooked, drained, and chopped *fat reserved

  • 1 teaspoon kosher salt

  • 1 teaspoon fresh cracked black pepper

  • 2 pieces multi grain, sliced and toasted lightly in olive oil

  • 2 breakfast radishes, chopped


Makes 3-4 servings

Put eggs, cheddar, and chives in a mixing bowl and set aside.

Mix together mayo, mustard, and 2 tablespoons reserved bacon fat in a mixing bowl.  Season with salt and pepper and add to egg mixture.

Spoon mixture on top of toasted bread and cut into 3 pieces 

Garnish with chopped radish, crumbled bacon bits, and more chives
