WATERMELON POPSICLE MIMOSAS WITH BASIL SUGAR
I absolutely love watermelon, especially when it’s hot outside! This is a really fun recipe to make while entertaining. You could also skip the alcohol and just make the popsicles.
ingredients
For the Mimosas
475 grams (about ½ of a small watermelon) seedless watermelon chunks
¼ cup simple syrup
Juice of 1 lime
Pinch sea salt
1 bottle sparkling Rose
For the Basil Sugar
12 grams (¼ cup packed) basil leaves
100 grams (½ cup) granulated sugar
Makes 4 servings
Place watermelon chunks, simple syrup, lime juice and sea salt in a blender. Blend until smooth, strain in a fine mesh strainer, discard solids. Pour strained watermelon juice into popsicle molds and freeze 4-6 hours, preferably overnight.
Make the basil sugar by adding basil and sugar to a food processor. Process for about 10 seconds until combined. Store in an airtight container in the refrigerator until ready to use.
Make mimosas by lining a plate with basil sugar. Wet the rim of your glasses with a lime wedge or water and place into the basil sugar. Add a watermelon popsicle to each glass and pour sparkling rose over.
