watermelon granita
ingredients
For the granita
4 cups seedless watermelon chunks
1/2 cup sugar
½ cup water
Juice and zest of 1 lime
For the garnish
Fresh mint
Light coconut milk
honey
Coconut flakes
Makes 4 drinks
Add sugar and water to a small saucepan. Boil and then simmer until sugar is dissolved. Remove from heat Add lime juice and zest to the pot and let cool.
Add watermelon chunks and cooled simple syrup to a food processor. Puree until smooth. Pour into a shallow, wide pan and freeze for 1 hour. Rake mixture with fork and freeze for another hour. Rake and freeze for one more hour.
Dip rim of glasses in honey, coat with coconut flakes. Add watermelon granita into cups, top with coconut milk and fresh mint.
