radish sandwiches with sea salt butter

It doens’t get more classic then this sandwich. The French have been pairing radishes with butter for years and I can see why. The pepperiness of the radish plays perfectly with the creaminess of the butter.

Ingredients

For the herb shallot butter

  • 4-5 radishes (french, Easter egg, or watermelon), washed and greens reserved

  • 2 slices of Focaccia or a baguette

  • Extra virgin olive oil

  • Aged balsamic

  • 2-4 tablespoons room temperature high quality sea salted butter (I like Banner Butter)

  • minced chives for garnish

  • salt and pepper



Makes 1 big sandwich

Thinly slice radishes.

Spread bread slices with plenty of butter, arrange radish slices on top. Place greens on top and lightly season with olive oil, aged balsamic, salt and pepper, and chives.
